There are some hidden features you can access in Dynasty Warriors: Origins including the Ultimate Difficulty, which is just one of the difficulties in the game, and Chapter Select.
These two features are not available by default which means you need to unlock both of them.
Here’s what to do to access some of the game’s hidden features, like Chapter Select and the Ultimate Warrior difficulty.

How to Unlock Chapter Select
Complete the story mode first; key phrase there being “first,” finish the main story campaign. Once you’ve done that, the Chapter Select functionality unlocks automatically in Dynasty Warriors Origins.
This allows you to jump into any chapter without having to start over at the beginning.
It’s good for replayability and trying out different paths or finishing missed goals.
You can also start a New Game Plus mode after completing the campaign. NG+ allows all your previous loot (weapons, skills, and upgrades) to carry over into your new playthrough. Which allows you to take on challenges, or pursue different strategies, without having to grind your way back up from scratch.
How to Unlock Ultimate Warrior Difficulty
After finishing the game for the first time, you unlock the Ultimate Warrior difficulty. It’s the most difficult setting in the game, meant for players seeking a real challenge.
Enemies are much more aggressive and require more skill to be survived on this difficulty. In fact, they deal 300% more damage, but you have 250% more health compared to lower difficulties.
The rules for parrying and dodging attacks become a lot stricter so there is very little room for mistakes. Timing for perfect parries/evades is halved (0.2 seconds).
Blocking on the other hand is going to drain 50% faster in Ultimate Warrior Difficulty. Lastly, you won’t get any healing drops from enemies so no meat buns or other healing items.
Rewards are also diminished, so you’ll need to be discerning with both your advancements and your purchases to remain competitive.
You can adjust the difficulty during play whenever you want. This gives you scope to fine-tune the challenge suitable for your ability and gear and find an adjustment that meshes better with your playstyle.
